Cotton Gin's Famous Breakfast Snack

Cotton Gin Village Granola

Makes 3 ½ pounds

Ingredients

Dry Mix

3 Cups

rolled oats

½ Box

cornflakes

1 Cup

unsweetened coconut

½ Cup

white sesame seeds

½ Cup

sliced almonds

½ Cup

sunflower kernels

½ Cup

pepitas

½ Cup

walnut pieces

Wet Mix

¾ Stick

unsalted butter

1 Teaspoon

cinnamon

1 Teaspoon

chinese five spice

½ Cup

brown sugar

¼ Cup

honey

½ Teaspoon

kosher salt

3 Cups Mixed

Raisins, golden raisins, currants, sundried cranberries, dried peaches, dried pineapple, dried papaya

Preparation

  1. Mix all dry ingredients together in a large bowl.
  2. Place all ingredients for wet mix, except for the dried fruit, in a small saucepan and bring to a simmer. Allow to cool a bit but keep it still very warm.
  3. Pour wet mix into dry mix and work with hands to evenly disperse the coating and eliminate any large lumps. Be careful not to burn yourself with the wet mix.
  4. Place on several parchment lined sheet pans in a thin layer and bake in 350 oven about ten minutes, stir and cook for an additional ten minutes or until lightly toasted.
  5. Allow cereal to cool and mix in dried fruit.
  6. Place in ziplock bags or quart size canning jars for gifts.
