As the Executive Chef of the renowned Cabernet Grill Restaurant, Chef Ross Burtwell has an exceptional palate and a deep appreciation for the diverse flavors of Fredericksburg. When he's not creating exquisite dishes at the Cabernet Grill, Chef Burtwell enjoys exploring the local dining scene. We asked him to share some of his favorite bites to eat around Fredericksburg, and here’s what he had to say.
Zuly’s Café
Zuly’s Café is famous for its exceptional homemade pastries, and with good reason. Owner Zulay has perfected her craft, creating everything from delicate puff pastries to stunning wedding cakes. But for Chef Burtwell, it's the items inspired by Zulay’s Colombian and Venezuelan roots that truly standout. During a personal trip to Colombia, he developed a fondness for Arepas, a traditional Colombian snack made of small masa cakes with savory fillings. In rural Texas, finding Arepas is a rare treat, which is why Chef Burtwell orders them every time he visits Zuly’s. His favorites are the Llanera (fajita)and Peluda (beef), both served with a zesty chimichurri. It's the perfect spot for a flavorful lunch, and don't forget to enjoy a cup of their excellent coffee.
Café Dimona
A hidden gem in Fredericksburg, Café Dimona serves Mediterranean fare that is both simple and flavorful. However, it’s Aylon’s Pita bread that has left a lasting impression on Chef Burtwell. Fresh, warm, and incredibly fluffy, it’s the perfect accompaniment to dishes like Lemon Kavush, Fire Roasted Baba Ganoush, or Spicy Shug. The pita alone is worth the visit, but the entire menu offers a delightful array of Mediterranean flavors to explore.
Casa Chole
For a more refined dining experience, Casa Chole offers upscale authentic Mexican cuisine, focusing on interior-style dishes that contrast with the more common Tex-Mex options around town. While their Ribeye Street Tacos with Bone Marrow are a standout, the real star of the show is the Mole Poblano Cured Duck entrée. The mole sauce is rich and complex, with layers of flavor that perfectly complement the tender cured duck breast.
Fredericksburg Brunch Company
A newer addition to Fredericksburg’s vibrant dining scene, Fredericksburg Brunch Company offers a selection of gourmet sandwiches and specialty egg dishes, making it a popular choice for both breakfast and lunch. While Chef Burtwell enjoys the French Omelet with Hollandaise & Frisée, the real highlight for him is the Beignets. These delicate, pillowy pastries transport you straight to the French Quarter of New Orleans with just one bite.
Eaker Barbecue
Since being named to Texas Monthly’s Top 50 Barbecue list, Eaker Barbecue has become a must-visit spot for BBQ lovers. The menu offers a unique twist on traditional Texas barbecue, with an Asian influence courtesy of co-owner Boo, who hails from Seoul, South Korea. Chef Burtwell is particularly fond of the Gochujang Pork Ribs, which feature a perfect balance of sweet and spicy flavors, topped with sesame and scallions. The House-made Kimchi and Korean Cucumber Salad are also fantastic sides. Though he hasn't had the chance to try it himself, Chef Burtwell hears the BOOzy Banana Pudding is absolutely unforgettable.
Emi’s on Austin Street
A newer addition to Fredericksburg's Tex-Mex scene, Emi’s on Austin Street has quickly become a favorite. Chef Burtwell's daughter introduced him to this spot, where she’s a big fan of the Carnitas Papitas—crispy fries topped with tender pork, pico de gallo, and Emi’s signature sauce. Chef Burtwell enjoys the Chicken Tinga Tacos, made with savory, shredded chicken, pickled red onions, and queso fresco. The bright, cheerful atmosphere and friendly service make this a fun stop for a casual meal.
Clear River Ice Cream & Bakery
Nestled on the golden blocks of Main Street, Clear River Ice Cream& Bakery is a true Fredericksburg institution. The staff's warmth andthe company’s community involvement create an inviting environment that makesevery visit feel special. But it’s the food that really sets Clear River apart.While the sandwiches, salads, and pastries are all delightful, it’s the housemade ice cream that steals the show. In fact, the Cabernet Grill has served several of Clear River’s signature ice creams for over 20 years. Chef Burtwell's personal favorites include Salted Caramel, Mexican Vanilla, and, when available, the indulgent BOOzy Snickers.
